Easy Blueberry Muffins -
Make them fast with a homemade mix

It seems like everybody loves blueberry muffins. When you use a homemade mix, they can be baked in the time it takes to get the rest of breakfast ready. Or you can have fresh muffins in no time to offer friends who drop in unexpectedly!


2 1/2 cups homemade mix
1/3 cup sugar (or less to taste)
3/4 cup water
1 egg
1/2 cup blueberries

Optional topping:

1/4 cup sugar (brown or white)
1/4 tsp cinnamon
1 1/2 tsps butter
1 1/2 tsps flour

  • Preheat oven to 400F.
  • Combine mix and sugar, mixing well to break up particles of shortening in the mix.
  • Beat egg and water together until well blended. Add to dry ingredient, mixing just enough to mix in dry ingredients (this will be lumpy).
  • Rinse and drain blueberries. Add to muffin batter and mix gently until blueberries are distributed in the batter. (Thorough rinsing eliminates blue streaks in the batter.)
  • Optional topping: Combine sugar and cinnamon. For a streusel topping, mix the flour with the sugar and cinnamon. Cut the butter into the mixture until it is evenly distributed in the cinnamon mixture.
  • Fill greased muffin tins about 2/3 full,(if using a topping, sprinkle about 1 tsp of topping on each filled muffin cup), and bake at 400F for 18 to 20 minutes.
  • Remove the muffins from the pan (so they don't get soggy), and enjoy!
