Whole Wheat Coffee Cake -
Simple, delicous and quick.



This whole wheat coffee cake is a quick and delicious way to add fiber to your diet. When you start with a homemade whole wheat mix, it is simple to get this quick bread on the table for breakfast or a mid-morning break.

Ingredients:
1 egg
1/2 cup water
2 1/4 cups whole wheat mix
1/2 cup raisins

Crumb topping:
1/2 cup brown sugar
1/2 tsp cinnamon
1 tbsp butter
1 tbsp flour

  • Preheat the oven to 400F
  • Slightly beat the egg and water together in a medium size bowl.
  • Stir in the whole wheat mix and raisins just until the dry ingredients are moistened
  • Spread evenly in a greased 8 x 8 baking pan
  • For the crumb topping: Mix the sugar, flour, and cinnamon together until there are no lumps of sugar. Add the butter and mix until the topping is crumbly.
  • Sprinkle the crumb topping over the batter in the pan.
  • Bake in preheated 400F oven about 25 minutes.
  • Cut in squares and serve warm.
